Eleni’s Simmer Sauce Bowl

Carrots
Red Bell Pepper
Broccoli
Potatoes
Lime
Cilantro
Recipe:
Prepare Carrots, Red Bell Pepper, Broccoli, and Potato to desired cuts
Add carrots, red bell pepper, and garbanzo beans to medium-heat sauce pan with cooking oil; then lightly sautee for 3-4 minutes
Add broccoli and potatoes (roasted or slightly boiled), salt-to-taste, slightly more oil (if desired), and continue sauteeing for another 2-3 minutes
Pour one jar of Eleni's Mild (or Hot or even Turmeric) Simmer Sauce to pot, half-can of coconut milk, and 1 Cup of Water, then stir gently, and let simmer for 30-minutes; add salt-to-taste (and either more coconut milk and/or water to desired consistency, if need be)
Add juice of half, fresh squeezed lime
Garnish with cilantro
Serve over rice
Enjoy with Pita Bread as well
